Perfect Summer Dinner

Hi Friends 😀

THANK YOU for allof the sweet words about my last post. I really am truly blessed to have SO many caring people in my life. Today I did do a double workout, but tomorrow I think I might just do one- maybe sleep in before work. That would be nice, I have not done that in a LONG time. I usually always work out before work. I’ll see how I feel all day- usually I feel grumpy/ not completely awake if I don’t work out first thing…but I’ll use this as an experiment. Although sometimes I naturally just wake up at 5am anyways, but maybe my body will enjoy the extra sleep. We shall see 🙂

Anyways, on to breakfast: a repeat of yesterday- an apple + a VitaTop, but this time a Apple Berry one.


once again, I ate it with some PB2 on top 🙂 Loving this combination.

Lunch was also a repeat- BUT I tried a new brand of Greek yogurt- Oikos. I got a few because they were on sale at Publix- 5 for $5..so I figured why not. I was impressed- of course my brand loyalty is to Chobani…but I did think they are a GREAT back up! I cannot wait until the stores near me get the chocolate Oikos- I have seen it everywhere in blog world & would LOVE to try it.

Lunch. Greek yogurt + watermelon + blueberries & strawberries + 1/4 cup both raisin bran & fiber one

Afternoon snack: Blueberry Alternative bagel

oops- got a bit hungry before I took the picture. I also enjoyed it with some PB2 that I had leftover from this morning.

I was feeling REALLY hungry this afternoon, so I had one of these around 3:30pm, shortly after my alternative bagel.

90 calorie Fiber One bar. Chocolate & Peanut butter

I ALSO had some animal crackers & GUESS WHAT?! I remembered to take a picture, even though it wasn’t a very good one.

For my afternoon workout I focused purely on Cardio:

After that I did some incline walking on the treadmill:
0-5 minutes; 3.7 speed; 5% incline
5-10 minutes; 3.5 speed; 10% incline
10-12 minutes; 3.5 speed; 0% incline

Then 5 minutes on the Arc Trainer.

Ended with 50 Ab exercises on the ab machine with 60 lbs.

Total time for this: 22:12 minutes; Max HR: 154, Avg HR: 141; Calories burned: 154

For dinner I decided to try something new: Turkey, Brie & Cranberry Sandwiches.
First, start with 2 pieces fresh bread (or 4 for two people)

Then cut your brie into small pieces.

slices of turkey on one 1/2 & brie slices on the other.

 And then the special ingredient:

whole berry cranberry sauce.

top with about 2 tbsp. cranberry sauce

place on baking sheet covered in cooking spray

And then bake (I used my toaster oven instead of a regular oven to bake these) at 400 minutes about 5 minutes each side.

I served it with a side of spinach & strawberry salad- with 2 boiled egg whites, a bit of Asiago cheese, & a few walnuts pieces.

I wasn’t sure if this was going to fill me up-but it SURE did!! And it was quick & easy to make after the gym. PERFECT in my book 😉

  1. I miss working out. I used to run…now I can’t run to save my life! Must be positive though.

    I was wondering about ya actually…two a day…when not training for anything hard=core, can be dangerous.

    You need to rest your body and not push to hard! And eat up. You are crazy busy even if you don’t work out, and need the energy and brain fuel.

  2. I’m in love with all the fruit in your lunch…I’ve definitely been known to enjoy a yogurt mess midday, even though it’s a breakfast food they just make me happy 🙂

  4. How did you like Shutter Island? We watched it over the weekend. It was…different. I am thinking a salad and sandwich dinner combo sounds like a great idea right now. It’s too hot for anything else!
