Quick Bread & Capricorns.

I think I’ve mentioned it before, but my favorite snack to have before bed is some kind of homemade quick bread. Typically it involves bananas because I tend to buy WAY more than I need every time I go to the grocery store. And, I’m really weird about bananas- I get it from my Dad- but I only like to eat them when they still have a hint of green on them. When they develop just ONE brown spot, then that’s IT…to the banana bread pile they go 🙂

I try to think of creative ways to change up the breads, sometimes I throw in some different kinds of fruit, or I will use a different flavor of Greek yogurt each time. I always like to try different substitutions though- like I will use the Greek yogurt in place of oil, or egg whites instead of eggs, & Splenda or honey as a substitute for sugar. I always make them with whole wheat flour, rather than regular- I actually like the taste better.

When I saw this recipe last week, I KNEW I had to make it…and I had to make it quick! I actually came home THAT night & made it. It’s the perfect combination of 3 of my favorite flavors- peanut butter, chocolate & banana. You can’t ask for much better, if you ask me. 😉

Jess has really topped herself on this one– although I think I say that every time I make one of her recipes 😀 

Chocolate Peanut Butter Banana Bread
(copied directly from Jess’ blog- you’ll see my changes indicated in parenthesis)  

makes one loaf

1/2 cup butter, at room temperature (I used a 1/4 cup butter, 1/4 cup plain greek yogurt)

1/2 cup peanut butter

1/3 cup brown sugar (I used 1/4 cup)

1/3 cup white sugar (I used 1/3 cup Splenda)

1 egg

1 teaspoon vanilla extract

4-5 large ripe bananas, mashed

2 cups whole wheat pastry flour [or all purpose flour]

1/3 cup cocoa powder (I used 1/4 cup)

1/4 cup peanut flour [99.9% sure this can be omitted if you don’t have it] (I didn’t have any 😦 )

1 1/4 teaspoons baking powder

1/4 teaspoon salt

1/4 teaspoon cinnamon

1/2 cup milk [I used vanilla almond milk, any kind will work] (I used Almond Milk too)

1 cup chocolate chips

raw turbinado sugar for garnish (again, I didn’t have any of this)

Preheat oven to 350 degrees. Combine flour, baking powder, cocoa, peanut flour, cinnamon and salt in a bowl and set aside.

Cream butter (and greek yogurt) and peanut butter in the bowl of an electric mixer. Add sugars and beat until fluffy, about 3 minutes.

 Add egg and vanilla, mixing until combined. Add bananas and mix. Add dry ingredients slowly, mixing until just combined. Stir in milk, adding more one tablespoon at a time if batter is not wet enough. Fold in chocolate chips.

(I forgot to mash the bananas, oops! But the blender did a nice just of mashing them 🙂 )

Spray a loaf pan with non-stick spray and pour in batter. Cover the top with course sugar for garnish. Bake for 50 minutes, or until knife inserted comes out clean.

Nothing better than topped with MORE peanut butter, Dark Chocolate Dreams of course, and then some random sprinkles!!

I mean sprinkles DO make everything better 🙂

I don’t know which sign I am supposed to go by since supposidly the signs changed. I’m not really into zodiac signs AT ALL. Never have been, never will be. I guess I’ll go by what I always thought I was– a Capricorn.

^isn’t that little guy cute?! I guess it’s supposed to be a capricorn- the sign is a goat.

I found this explanation of Capricorn traits on THIS website. I just added in my own personal thoughts through out, my opinion is in the PINK color.

I like fancy food & simple food- but I like to cook it 🙂 I’m not really into expensive gemstones.

Capricorn Dislikes:untidiness and disorder of all kinds, being teased, surprises, new ideas, loneliness, being made to feel useless or incompetent, and being embarrassed in public.

*I do HATE untidiness in the house, especially the kitchen, and my office. Everything has an EXACT place in my office & kitchen.

^TOTALLY agree with that whole paragraph. I’m very dedicated to my job & am willing to go the extra mile to get everythin done. I will stay late, arrive early & even work through my lunch break…which happens alot.

^I guess I agree with SOME of that. Like I am willing to work hard for anything I want & self esteem IS extremely important..but that doesn’t mean I have high self esteem- I’m working on it 😉 I don’t really think I’m too materialistic. And I have no idea what a social design is; but I know I am super excited to marry the man of my dreams 🙂

So, I guess I agree with HALF of this summary of a capricorn. Not too bad!

  1. LOL – I am the same way with bananas. Jason gets all the “bad” ones. He thinks I eat them raw and won’t eat “mine” so it works out perfectly. I am a scorpio – and I pretty much fit the bill.

  7. I’m a virgo=) I read my horoscope every once in a while just for fun! I love quick breads I made zucchini bread the other day and I’ve been slowly enjoying it! I have a banana bread pile too, but they’re frozen. My roommates are good at buying whole bunches of bananas and never eating them! I’ll have to try this recipe it looks so good=)

  10. Oh my word, this looks delicious. Thanks for sharing the recipe. Did you hear that they are trying to shift everyone’s signs because the Earth and stars have shifted their positioning. I freaked out a little. I am an Aquarius and just could not imagine reading a different horoscope each week.
