Chocolate Cinnamon Roll Muffins

Good Morning! 😀 THANK YOU SO MUCH for all of your comments on my last post. It’s so nice to know that I’m not the only one out there dealing with this & I appreciate all of your support!!

Our weekend of Valentine’s Day celebration continues!! I think Craig has caught on after these few years how much I love Valentine’s day 😉 He told me, “H, we gotta do it BIG!” Sounds good to me!

First, I’ll catch you up on yesterday. Craig & I spent the day together- we started with our workouts at the gym & then we decided to do some shopping. We both needed to look for some spring/ summer clothes & a few of the stoes that we like were having some great sales, so we figured we should check ’em out.

We both ended up getting some new shirts (2 tanks for me & 2 t-shirts for him). He also some new shorts & socks & he got me a pair of new flats. I thought they were so cute! I asked Craig if he liked them & he said he did & that he would buy them for me as part of a Valentine’s day present. What a sweetie, huh?! 🙂

Ohhh boy!

After our shopping, I got ready to go & meet my friend Cori at her boutique. She was going to close at 6pm, so I figured I would get there a little early so that we would have extra time to chat! Look at this cute little dog that she is watching:

His name is Leo & he is about 2lbs!! He is the sweetest little guy- he just wants to sit in your lap & snuggle all day. She does NOT want to give him back. She has fallen in love with him! How could you not?! Look at that little face 😀

We went to dinner & spent some more time chatting. I ordered this salad, but it was rather disappointing. I thought it would come with grilled chicken, but it ended up coming with this ground chicken that tasted like it had soaked in brown sugar- EW! Wayyy too sweet. I didn’t mind the salad because I had such great company 🙂

After catching up, I headed home to spend of the envening with my hunny bunny. We are on Season 2 of Dexter, so our night was spent watching a few episodes 🙂 LOVE that show!!

This morning, since we are continuing our Valentine’s weekend, I figured I would make Craig an extra special breakfast. I had some cinnamon in the fridge, so I figured I would use them..but I didn’t want to JUST make cinnamon rolls. I put a little twist on them!

Chocolate Chip Cinnamon Roll Muffins

All you need are two ingredients:

-1 package cinnamon rolls
-a few chocolate chips

Prep:
1. Preheat oven to 400 degrees. Unroll cinnamon roll carton & place cinnamon rolls on a cutting board, or flat surface. Cut each roll into 4 pieces (I used a pizza cutter to make it easier.)

2. Spray a muffin tin with cooking spray & place 4 pieces in each tin. No need to place them in a certain pattern, just kind of toss them in. If you want, throw a couple of chocoalte chips in each tin.

3. Bake for about 12- 15 minutes, until golden brown.

4. Top with the icing that is enclosed in the cinnamon roll carton & then drizzle with chocolate syrup, if desired.

Simple, quick & tasty 😀

I also made Craig a big ol’ omelet filled with bacon, onions & peppers…with a side of bacon as well.

As usual, my breakfast isn’t quite as exciting to look at…but it sure tasted good 🙂

A plain cinnamon roll muffin x 2 (no chocolate- not a big chocolate fan) & 2 egg whites with ketchup.

What a good way to start this Sunday! I can’t wait to make dinner for Craig- I have a BIG surprise & I know he’s going to LOVE it!!

Now I’m letting my food do some digesting before starting my workout- I might just do a long run today- feeling pretty good 🙂 & then Craig suggested we do some MORE shopping!!! HE really suggested it…another reason I know I picked the perfect guy to marry 😉
