Crunchy Nut Chicken

Goooooood Morning!

I don’t know about you, but I LOVE going through the Sunday paper for coupons. It is typically what I do while I’m waiting for Craig to get up. I just sit & enjoy a cup of coffee & clip coupons.ย  (that is actually the only reason that we get the Sunday paper!) Usually I am really good with coupons & just clip the ones of the products that I already use. I know some people think coupons are just a gimic to get you to buy new stuff (I’m talkin’ to you Dad ๐Ÿ™‚ )…but I am actually really good with sticking to what I already buy!

The ONLY thing that I always clip coupons for is cereal. No matter if we already eat it or not. You see, I always buy the same cereal for me- either Special K withย Red Berries,ย Kashi Go Lean or Rice Krispies. I don’t know what it is about those Rice Krispies, I just love them…and in case you missed it- I like them soggy. Yes, don’t worry, you read that right, soggy ๐Ÿ™‚ Anyways, Craig will eat any cereal. He is game to try anything (which is one of the many reasons that I love him) & so I always clip coupons for cereal. I figure I mine as well save money while picking out new cereals for him. I think he actually enjoys it because whenever I come home from grocery shopping he is always anxious to see what cereal I bought him for the week. It’s the little things in life, right?! ๐Ÿ™‚

I happened to be browsing through the coupons last Sunday & found a coupon for a $1 off Crunchy Nut cereal, I figured I would get it for Craig to try.

While I was trying to figure out dinners this week, I wanted to find a way to incorporate this cereal. I remembered how much we both LOVE corn flake chicken, so I figured I would kind of re-create a recipe similar to that using this Crunchy Nut cereal.

Crunchy Nut Chicken

Ingredients:
-1 lb. chicken tenderloins
-2 cups Crunchy Nut cereal
-Salt & pepper
-2 egg whites
-Honey, for drizzling on chicken

Preparation:
1. Take the 2 cups of Crunchy Nut cereal & put it in a food processor, or blender. Pulse/ blend until the cereal is ground pretty finely, but there are still a few bits in the mix- just no whole cereal pieces.

2. Sprinkle each side of the tenderloins with salt & pepper. Then pour the cereal crumb mixture onto a plate. Set up an ‘assembly line’- take each tenderloin & first dip it into the egg whites & then into the crumb mixture. Make sure both sides are coated with the cereal crumbs.

3. Place the coated chicken tenders on a greased baking sheet. Spray them with cooking spray (to help them get crispy) & then drizzle them with honey.

4. Bake for about 15- 17 minutes, or until no longer pink in the middle.

I mixed up some honey mustard (just did equal parts yellow mustard with honey) & served it with the tenders.

I loved the sweet flavor that these tenders had! Sometimes you just need a little more sweetness in your life ๐Ÿ˜‰

Craig said these might actually be his new favorite chicken tenders! I was pretty happy to hear that comment coming from him- he is like the king of chicken tenders. I swear he could of eaten the whole plate tonight…but thank goodness for self control- haha ๐Ÿ˜€

Well, I’m off- got a LOT of work to conquer today. BUT, you know what already makes this a GREAT day?!!?! That it is a NEW ‘The Office’ tonight & Will Ferrel will be on it! Even though I know it is going to be EXTREMEMLY hard to replace Steve Carrell, I think it will be great to have Will on there for a little while ๐Ÿ™‚

  2. The only reason we get the Sunday paper is for the coupons too!! We pretty much clip a coupon for anything that we might buy – whether we actually use the coupon is a different story. I love using coupons!! I feel like we save so much money over the course of the year just by spending a few minutes clipping coupons!

  4. You are always so creative with your recipes and they look so good especially with the honey mustard, it’s one of my favs! I like clipping coupons and when I do I also try to stick with products I already use although I’m not very good at actually using the coupons so I haven’t done it in a while. I alway check the Publix ad online before I head to the store so I know the deals already and can make a list though! I really like The Office but never seem to catch it live. I watched the episode before last at work while sticking addresses labels on hundreds of postcards. There will be more of that today so maybe I can catch last night’s episode:)

  5. That’s a great idea to use cereal for a coating…never thought of that before! I’m already thinking about which cereals are in my pantry and which would be good on chicken. Thanks for the idea!

    I clip coupons and usually get things that I know I will like but once in awhile will branch out if it’s a good deal.

    Not a huge tv person, so I don’t watch The Office.

  6. Wow you are so creative with your dishes! I actually recently saw this cereal in the grocery store and debated buying it but then didn’t want to waste money on something I could potentially not like. I’m glad you tried it and incorporated it with this chicken dish! I have so many recipes to try when I get home, as I will finally have access to a kitchen, and this is definitely one of the dishes I will be making ๐Ÿ™‚
    I watch The Office on occasion but I really should watch it more because it always ridiculously hilarious. Favorite character? Hmm hard to say…. I guess it depends on the episode!

  7. Jason has a thing for Rice Krispies too. I’ve never cared much for them actually. Love my Kashi GoLean Toasted Berry Crumble. MMMM As for clipping coupons, you bet! Groceries are getting freaking expensive (everything is) so save where I can.

  8. Your chicken looks really good! It’s actually been a while since I’ve made any kind of breaded chicken! I never incorporated honey into my chicken tenders before so, thanks for the idea!

    My favorite combo for breaded chicken is to mix in some lemon zest and Parmesan cheese into the breadcurmbs. It’s really good! ๐Ÿ™‚

  10. I love your anecdote at the top about buying cereal for Craig. It’s such a cute little thing ๐Ÿ™‚ There’s something so nice about being able to do little things for the one you love. I like the recipe too. I can even use it with my new favorite thing: Corn Flake Crumbs!

    Those look so yummy! I actually saw a coupon for a dollar off that same cereal and thought about getting it for Christopher (too much sugar for me), but ended up going with something different. I do use coupons sometimes (though not near as often as I should), but only when it’s a product I normally buy anyway. ๐Ÿ™‚

    And I LOVE The Office! I can’t wait to see tonight’s episode!

  13. Holly, Interesting! I just saw these at the store and thought about buying them. Both my husband and I are pretty boring when it comes to cereal though, so I didn’t want it to just be sitting in the pantry!

    I used to cut coupons all the time, but I found that I didn’t end up using most of them.

    This recipe looks stellar though ๐Ÿ™‚

  16. Steve Carrell was my fave! I am so anxious to see how Will Ferrell does — I love him but I feel like he’s been on a downward spiral for a little bit :-/

    Hey! I’m a fairly recent new reader, found your awesome blog through Peanut Butter Fingers a few weeks back. That chicken looks delicious! On a side note, if you love Craig at all you’ll get him the Crunchy Nut Flakes to try. It’s the most addictive cereal ever and you’ll be lucky to have some to use for chicken lol. All the boxes of that cereal I get (either variety) have a free mail in rebate coupon on the back, so if you keep your recipt you could try it for free! Winning!
